Great Bear Scallop Sashimi with Lemon Oil

Mix a little finely grated lemon peel into some extra-virgin olive oil and finely dice a small amount of the lemon flesh. Thinly slice a shucked Great Bear scallop and plate. Drizzle with a little of the oil and a few dots of lemon. Sprinkle with flaky sea salt and serve immediately.
