  • Fillets are skin on, boneless and “buttons” removed
  • Flesh is white with golden hued fat lines
  • Average fillet size is approximately 1.5 to 4 pounds

  • Excellent shelf life, minimum 4 days from delivery

  • The mild flavour actually gets better after the fish ages for a few days
  • The very firm texture lends well to pan frying, grilling, and broiling
